A honey settling tank is a food-grade tank with a gate at the bottom where extracted honey sits for a day so air bubbles and fine wax rise to the top before bottling. This one holds 9.5 gallons (36 L), which is about 114 lb (52 kg) of honey, and is made from 304 stainless steel with a lid, a two-stage strainer that sits in the top, and a choice of plastic or stainless steel honey gate.
Why settle honey before bottling?
Honey straight from the extractor is full of air and fine cappings. After 12 to 24 hours in the tank the foam and wax float to the surface and what comes out of the gate is clear, so jars fill without bubbles or a wax line. The tank also gives you somewhere to hold a day's extracting until you have time to bottle.
How much honey is 9.5 gallons?
Honey weighs about 12 lb per gallon, so 9.5 gallons is roughly 114 lb, or about 95 one-pound jars. That is a comfortable size for 3 to 8 hives, or one extracting session from a larger yard.

Frequently asked questions
Plastic or stainless honey gate?
Both seal well. The plastic gate is lighter and cheaper; the stainless gate is stiffer, easier to clean at high temperature and the choice if you bottle often.
Can I heat the tank to decrystallize honey?
Not directly. Warm the room or use a bucket warmer band around the tank; do not put a flame under it.
How fine is the strainer?
The coarse strainer catches cappings and bee parts, the fine one catches small wax and pollen. Honey still needs to be warm (around 95°F) to pass the fine strainer at a useful rate.
Is it food safe?
Yes. 304 stainless is the standard for food and dairy equipment and does not react with honey.
